1 cup soft shortening (Crisco), at room temperature | 1 1/2 cups sugar |
2 eggs | 2 3/4 cups flour |
2 tsp. cream of tartar | 1 tsp baking soda |
1/2 tsp salt | sugar and cinnamon for topping |
Mix shortening, sugar, and eggs. Sift together remaining dry ingredients, and add to the egg mixture. Roll dough into balls the size of small walnuts.
Make a mixture 3:1 of sugar and cinnamon. Roll dough balls in
the cinnamon-sugar mixture.
Place about 2" apart on an ungreased cookie sheet. Bake at 400 degrees
for 8-10 minutes. They should still be soft.
The cookies will puff up, then flatten out as they bake.
