Snickerdoodles

1 cup soft shortening (Crisco), at room temperature 1 1/2 cups sugar
2 eggs 2 3/4 cups flour
2 tsp. cream of tartar 1 tsp baking soda
1/2 tsp salt sugar and cinnamon for topping

Mix shortening, sugar, and eggs.  Sift together remaining dry ingredients, and add to the egg mixture.  Roll dough into balls the size of small walnuts.

Make a mixture 3:1 of sugar and cinnamon.  Roll dough balls in the cinnamon-sugar mixture.

Place about 2" apart on an ungreased cookie sheet.  Bake at 400 degrees for 8-10 minutes.  They should still be soft.

Notes and Variations

If the dough is too gooey, chill it before rolling the cookie balls.
Rinse the dough off your hands as needed while rolling the dough, since the shortening melts from the heat of the skin.

The cookies will puff up, then flatten out as they bake.
