Squash Casserole

Serves 4-6
 
 
2 cups cooked mashed squash 1/4 cup sugar
1/2 cup mayonnaise1/2 cup shredded sharp cheddar cheese
1/2 cup breadcrumbs or cracker crumbs such as Ritz1/2 cup chopped onion
1 egg beaten

Preheat the oven to 350 degrees.

Stir all the above together and put into a 1 1/2 quart casserole

Topping
1/2 cup cracker crumbs 1/4 cup butter (1/2 stick), melted
1/2 cup chopped pecans

Top with topping.

Bake 40 minutes.

Notes and Variations

Works OK with gluten-free breadcrumbs. (11/2008, 12/2009)
Try with brown sugar or honey or maple syrup instead of white sugar.  Try margarine instead of butter?
Can be doubled or tripled.
