Spanish Rice Pronto

Serves 6

1/4 c. bacon drippings or butter 1 medium onion, thinly sliced
1/2 green pepper, diced 2 cups Minute Rice
2 cups hot water 2 cans tomato sauce (8 oz. each)
1 tsp salt dash of pepper

Melt fat in saucepan or skillet.  Add onion and green pepper, and Minute Rice right from the box.

Cook and stir over high heat until lightly browned.

Add remaining ingredients, and mix well.

Bring to a boil, reduce heat, and simmer uncovered 5 minutes.

Notes and Variations

Optional: add 1/2 tsp. prepared (dry) mustard.

Can use two 1-lb. cans stewed tomatoes instead of the tomato sauce & water.
