Red Bliss Potatoes

15 very small Red Bliss potatoes 2 tsps. melted butter
fresh herbs such as tarragon salt and pepper to taste

Boil potatoes until just done, about 20 minutes.  Drain.

Heat butter in sauce pan, cook potatoes for about 2 minutes.

Add generous amount of chopped herbs and cook for another minute until herb aroma is apparent.

Add salt and pepper and serve.

Notes and Variations

Made May 1995, with potatoes from Pennsylvania Dutch country.  Used fresh tarragon, very good.  Very good served with grilled chicken or fish.
