Chocolate Pecan Pie

Author: Mark and Jane
Serves 8-16

3 eggs, slightly beaten 1 cup light or dark corn syrup
1 pkg (4 oz) Baker's Semi-Sweet chocolate, melted 1/3 cup sugar
2 Tbl butter, melted with the chocolate 1 tsp vanilla extract
1 pie shell, preferably deep dish 1 1/2 cups pecan halves

Preheat oven to 350 degrees.
Melt chocolate and butter together, usually in the microwave.  In large bowl, mix eggs, syrup, sugar, and vanilla.  Add chocolate/butter mixture slowly so that it does not cause the eggs to set.  Mix all thoroughly, until well blended.  Stir in pecans, and mix to coat them.  Pour all into pie shell.
Bake at 350 for 50 to 60 minutes or until a knife inserted halfway between the center and edge comes out clean.  Cool on a wire rack.

Notes and Variations

Jane is particularly fond of this recipe; Justin has a preference for the Bourbon Pecan Pie instead.  This one is considerably less sweet, with a fairly strong chocolate flavor.
