Cheesecake

Serves 16-24
 
3 eggs, beaten 1 lb. cream cheese
3/4 cup sugar 1 tsp. vanilla
1/4 tsp. salt 2 cups sour cream
4 tsp sugar 3/4 tsp vanilla
dash salt 2 graham cracker pie shells

Mix eggs, cream cheese, 3/4 c sugar, 1 tsp vanilla, 1/4 tsp salt.  Mix thoroughly (it will take a while).  Pour into pie shells.  Bake half an hour at 375 degrees.
Let cool.

Mix sour cream, 4 tsp. sugar, 3/4 tsp vanilla, and dash of salt.  Pour evenly over lower layer of pie.  Bake 5-10 minutes at 425 to glaze.

Cool, and refrigerate.

Notes and Variations

Smurf Pie:  Add about 8 drops blue food coloring to the sour cream mixture.  Delightful for really wierding people out, and for "strange food" occasions.

Butterscotch Cheesecake:  Reduce total vanilla to about 1/2 tsp.  Replace with half as much butterscotch extract.  Mix butter brickle into cream cheese mixture and sprinkle on top of pie, too.
