Quick Banana Bread

1 3/4 cups flour 2 1/4 tsps. double-acting baking powder
1/2 tsp. salt 1/3 cup shortening (Crisco)
2/3 cup sugar 3/4 tsp grated lemon rind
1 or 2 beaten eggs 1 to 1 1/4 cups ripe banana pulp
1/2 cup chopped nuts

Preheat the oven to 350 degrees.

Sift (stir) together the flour, baking powder, and salt.
Cream the shortening and sugar together.
Add the eggs and banana pulp to the sugar mixture.
Add the flour mixture to the batter, in two or three parts.  Mix until uniform.
Add the nuts.

Bake about one hour, or until done.

Notes and Variations

I omit the lemon rind.

Two or three bananas, four if they're small, yield the right amount of mashed banana.
